Tempting the Taste Buds: The Vegetable Dishes I Can’t Live Without

My table has been bursting with yummy, new vegetables each night. The source of inspiration for my vegetable creations is The Vegetable Dishes I Can't Live Without by Mollie Katzen. Very Green Rice sautés Basmati rice with a variety of herbs equal to the amount of rice- making it the most flavorful and savory rice dish I've had. I've fallen in love with the Fennel and Fig salad as well as the Feta Walnut Stuffed Cucumbers. The Artichoke Heart and Spinach Gratin was my first attempt cooking with artichokes and the result was terrific. It's tasty on its own or as a veggie and chip dip. This is the best vegetable cookbook ever- So celebrate this harvest season by turning your fresh vegetables into culinary masterpieces (but don't be fooled, the recipes are simple and easy to follow)!
